Italian Scramble
The term "scramble" has been used recently to describe eggs cooked (scrambled) with other ingredients.
Serves 2
- 1 teaspoon Olive oil
- 1/8 teaspoon Garlic, minced
- 1 tablespoon Onion, chopped
- 1/4 cup Mushroom, sliced
- 1/4 cup Tomatoes, diced
- 2 teaspoons Basil, chopped
- 4 Eggs, beaten
Heat the oil in a heavy skillet. Add the onion, garlic, and mushrooms. Cook until just soft. Toss in the tomatoes and basil. Add the beaten eggs and cook until just firm, stirring frequently. Serve warm with toast or focaccia.
