Griddled Pizza

The quick cooking of the crusts in a skillet gives these pizzas a different texture.

Serves 4

Add the flour and salt to a mixing bowl. Work in the butter with your hands (or with the dough hook of a stand mixer). Add the water in small batches. Knead on a floured cutting board until smooth (5-10 minutes). Cover and allow to rest for 30 minutes. Divide into four pieces. Roll out to form four 6-inch thin circles. Heat the oil in a skillet until medium-hot. Add the dough (one at a time) and cook about 1 minute per side (or until lightly browned). Place on a cookie sheet, add your favorite toppings and place under the broiler until the ingredients are warm and the cheese melted.
