Chilled Tomato Basil Soup
This uncooked refreshing soup makes a great first course.
Serves 4-6
- 3 cups Tomatoes (fresh or canned), peeled, seeded, and
- diced
- 1/4 cup Basil, fresh, chopped
- 1 1/2 cups Tomato juice
- 3 Tablespoons Red wine vinegar
- 1 1/2 Tablespoons Olive oil
- 1 teaspoon Garlic, minced
- Salt and pepper to taste
Chop the diced tomatoes until minced. Add all ingredients to a large glass bowl. Mix well. Check the seasonings. Cover and chill at least 2 hours. Serve cold.
