Caesar Salad
This can be used as is as a first course or as an entrée with the addition of grilled chicken or shrimp.
Serves 4
Dressing
- 3/4 cup Olive oil
- 1/4 cup White wine vinegar
- 1 teaspoon Garlic, fresh minced
- 1/8 teaspoon Pepper, fresh ground
- 1/4 teaspoon Anchovy paste, (optional)
- Dash Salt
Mix all ingredients except the oil in a food processor. With the processor running S-L-O-W-L-Y trickle in the oil.
Salad
- 1 head Romaine lettuce, chopped
- 1/2 cup Croutons
- 1/4 cup Grated Parmesan cheese
In a large bowl, toss lettuce, croutons, cheese and dressing right before serving. Garnish with a little more cheese.
