Avgolemono

This Greek soup is light but flavorful.

Serves 4-6

Slowly heat the broth. Add the cooked rice. Lightly beat the yolks with the lemon juice. Add one ounce of the warm broth to the egg mixture and mix well. Remove the broth from the heat and slowly whisk in the egg mixture. Warm over very low heat. Do not simmer. Check the seasonings. Serve immediately.
